For Sweet Potato Wellington Bake 30 mins or until Golden brown top and bottom
Taste the filling and add more seasoning to your taste ;

500g Sweet Potatoes
450g Mushrooms I used Chestnut variety
1 Onion
2 Cloves Garlic
100g Breadcrumbs
2 Sheets of Jus Roll Puff Pastry
1 tbps Sage
1 tbps Rosemary
1 Tbps fruit Jam/ Jelly
1 tbps Lemon Juice
40g Chopped Walnuts
40g Dried Cranberries
2 Tbps Dairy free Milk
1 Tbps Mustard I used Dijon Mustard
Salt Pepper to taste
