DELICIOUS PUMPKIN PIE
Warm and delicious! Warms the body and the soul!

Ingredients:
– 1 cup, well filled dates (140g)
– 1 ¼ cup of oat flakes (100g)
– ½ cup of walnuts (60g)
– 2 teaspoons cinnamon powder
– 2 tbsp coconut oil
– 1 tbsp of water
– sea salt

FILLING
– 1 cup of pumpkin purée (about 400g of pumpkin without seeds)
– 1 cup of vegetal drink (oat, soy, almond, etc)
– 2 tbsp cornstarch
– 250ml rice syrup (or maple syrup or other natural sweetener)
– 1 tbsp coconut oil
– 1 tbsp vanilla essence
– Pumpkin pie spice mix ( you can make it with ½ tbsp cinnamon, and pinch of ginger, clove powder, nutmeg and pepper.
– Sea salt

1. To make the pumpkin puree, begin by peeling and cutting the pumpkin into small pieces and cook in a pan with a cinnamon stick, 1 orange peel, a pinch of sea salt and a little water (without completely covering the pumpkin). Let it cook until it’s soft. (about 20 minutes). Then drain, remove the orange peel and the cinnamon stick and mash until it becomes a puree. Set aside.
2. Turn on the oven to 180º (356F) and prepare a 20cm diameter tart pan.
3. BASE: Place all the ingredients for the base in a food processor and mix until you get a mouldable mixture that can form a ball.
4. Place the ball of dough on a sheet of baking paper and with the help of a rolling pin, roll out until it is round and less than 0.5 cm thick. Take the sheet with the dough and place it on the tartlet and smooth the edges. Prick the bottom with a fork and bake in the oven for about 8 minutes.
5. FILLING: In a pan put the vegetable drink and cold mix the cornstarch. Turn on the heat and add the sweetener, stirring constantly until thickened. Add and stir in the pumpkin puree, spice mix, coconut oil and turn off the heat.
6. Place the filling on the base of the pie and bake again for about 10 minutes.
7. Allow to cool well before cutting and store in the fridge afterwards. You can serve this pie with a whipped cream or coconut vegetable yoghurt.
