1 pound of potatoes
1 bag of vegan meatless balls
1 big onion
1 green pepper
1/2 of red pepper, or marinated red pepper
1 cup of celery
1 cup of tomatoes from can, or fresh ones
3 tbsp. of nutritional yeast
Rosemary, sage, thyme, parsley flakes, pepper, and salt to taste
1/2 cup of plant based Cesar dressing, or plant based milk
Cut potatoes into small pieces and bake them for 45 minutes at 450F until nice and crispy. In the meantime, saute all the vegetables. When soft, add meatless balls and saute for 15 minutes. Add spice, salt , pepper, and nutritional yeast. Mix your mixture with Cesar dressing and juice from tomato can. If using fresh tomatoes , add water. Saute it a few more minutes until flavors combine. Pour the mixture over baked potatoes evenly and let it baked for 10 more minutes.
