In today’s video I am going to show you how to make a Vegan or Plant-based chicken noodle soup. This recipe is perfect if you want to eat more plant-based for the month of January to give your system a rest after all the good food you ate after the holidays. This soup recipe is easy and perfect for the winter. The ingredients that are in this soup help support and healthy immune system, which is what we need right now in the winter months. Chickpea and Orzo Soup Recipe


1 can of chickpeas
1/2 cup Orzo
1 32 oz carton or Vegetable stock
1 medium carrot diced or shredded
1 celery stock
1/2 medium onion diced
4-5 cloves Garlic minced
1 thumb of fresh grated or minced ginger (or 1/2 tsp ground ginger)
1/3 cup fresh parsley chopped
1 tsp turmeric
1 tsp oregano
1 tsp thyme
1 tsp onion powder
1 tsp garlic powder
1/2 tsp celery salt
1/4 tsp chili flakes

1. Cook onions until translucent add salt and pepper to taste (3-5 minutes)
2. Add garlic and cook until fragrant
3. Add Turmeric, oregano, thyme, and ginger cook for 1-2 minutes
4. Add stock, carrots, celery, onion powder, garlic powder, celery salt, and chili flakes. bring to a boil and cover. Reduce heat to low and cook for 15 minutes
5. Add fresh parsley and orzo and cook for an additional 10 minutes.
6. Add a sprits of fresh lemon juice for brightness, but the this step is optional
7. Serve with sourdough bread! Enjoy 🙂

put in a freezer safe container and leave room for the soup to expand.
