Recipe:
-8 potatoes peeled and cubed
-half of a sweet onion, chopped
-2/3 cups celery, chopped
-1/3 cup dill pickle, chopped
-4 tbsp pickle juice
-7/8 cup vegan mayo
-3 tbsp yellow mustard
-1 tbsp white sugar
-1/3 tsp salt
-1/4 tsp black pepper
-paprika (optional)
Cook potatoes in boiling water until tender but not mushy.
Drain water and let cool completely before adding ingredients.
Once cooled, mix in all ingredients and sprinkle paprika on top.
This salad is better the next day! 🙂
