So get this Lovers, Movers & Shakers, Eaters and Foodies Anonymous, eggplants are actually classified as fruits and not vegetables, specifically berries, as crazy as that sounds, because of their small and edible seeds. Did you know that? We learn something new each day. Life is an adventure.

I tend to do my batter in different ways, add what I want and this is just one of the ways.

It’s really nothing like fish but it’s just awesome as it’s own thing.

See recipe skeleton below but be free to add your own seasonings and do your own thing:

1 small to Medium Eggplant

Wet Batter:

1 + 1/2 cups Flour
1 tbsp Corn Starch
1/2 tsp Baking Powder
3/4 tsps Fine Sugar OR Agave
1 tsp Dried Thyme
1/2 tsp Turmeric
1/2 tsp Paprika
1/2 tsp salt
1 tsp Granulated Garlic or Garlic Powder
2 tsps Onion Powder
A Dash of Ground Allspice
1/4 tsp of Cayenne/ Red Pepper Flakes OR
Your Fav Hot Sauce to taste and heat tolerance.
1/4 cup chopped or blended Dried Seaweed OR
1 tbsp Vegan Fish Sauce

Combine all ingredients and add enough water to create a batter thick enough that it clings to your spoon.

Dried Batter:
1 tsp Onion Powder
1/2 tsp Garlic Powder
1/4 tsp Paprika

Slice your eggplant. Dip each stick into wet batter then into dry batter and place on a separate parchment lined dish to set for about 3 minutes before frying or baking. Fry until golden brown on both sides. If baking/oven frying, Preheat oven to 400 degrees. Lightly oil your pan, place fries down and sprinkle with a little olive oil or vegan butter. Allow to brown and turn so that the other side may brown until golden also.
