I picked up the freshest fruit I could find and made vibrant layers in these two breakfast parfaits: Pumpkin Blueberry Parfait and Mango Chia Seed Pudding Parfait. Pumpkin Breakfast Parfait
– 7.5 oz pumpkin purée (1/2 of a can)
– 1 Banana
– Blueberries
– Pumpkin Seeds
– Gluten-free granola or Oatmeal mix
– Honey
– Coconut yogurt & chia seeds
– Collagen powder (optional)

Mango Chia Seed Pudding Breakfast Parfait
– Yellow Mango
– 2-4 tbsp chia seeds
– 1/4 orange juice (I made it with orange juice and turmeric)
– Honey
– Coconut yogurt
– Strawberries
– Pomegranate seeds
