Vegan Baked Onion Rings with Quinoa (Eggless, Dairy Free)

Welcome to Lettuce Veg Out with vegan Registered Dietitian Nicole Stevens. Today we’re vegging out on amazingly crunchy and lightly spiced vegan onion rings.

These onion rings are baked for a deliciously crispy quinoa and breadcrumb coating and to create a lighter side dish or appetizer. Along with a few spices in the breading mixture, this recipe packs in flavor and the quinoa provides an amazing crunch!

Serve alongside your favourite vegan burgers, hot dogs, sausages or any other meal that could use such a simple and delicious side. These are best served with your favourite dipping sauce (get my best recommendation in the full post, link above!).
