It would be equally at home with a soup or sandwich from fall through winter. It’s easy to make and the leftovers taste just as good the next day. Don’t be intimidated by the ingredient list, this soup only requires basic pantry ingredients and is very easy to make!

Ingredients for making creamy pumpkin vegan soup recipe:
1/2 a large pumpkin
Salt and pepper
Fresh rosemary
Fresh sage
3 tablespoons olive oil
1 large onion (chopped)
4-6 garlic cloves (minced)
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/8 tsp ground cloves
1/8 tsp cayenne pepper
Freshly ground black pepper
4 cups vegetable broth
1/2 cup coconut milk
2 tbsp maple syrup or honey
green pumpkin seeds

Instructions for making homemade vegan roasted pumpkin soup:
– First cut your half pumpkin in half
– Then lay it on a baking sheet
– Baste the inside with olive oil
– And season lightly with salt and pepper
– Now place some rosemary and sage inside as well
– Bake in the oven at 425F for 35 minutes
– In a large pot add your olive oil
– Then add in your chopped onion
– And add in your minced garlic
– Season lightly with some salt
– And mix everything together
– Now add in the insides of your roasted pumpkin
– And add in your ground cinnamon
– As well as your ground nutmeg
– And also your ground nutmeg
– Then add in your cayenne pepper
– And season with some freshly ground black pepper
– Now add in 4 cups of vegetable broth
– Cover the pot and simmer for 15 minutes
– And add in your coconut milk
– Sweeten lightly with maple syrup or honey
– Now mix everything together and cook
– Add the contents of your soup to a blender
– And blend to a puree
– Pour in your bowl and drizzle with olive oil
– Top with green pumpkin seeds and your roasted pumpkin soup is ready to eat
