The first step is to press your tofu – and no, you don’t need a fancy tofu press. Just use a sieve, wrap your tofu in a kitchen towel and place something heavy on top of the tofu.
Then freeze the tofu to break up its structure, thaw it and press it again – voilà, you are left with an amazingly delicious tofu.
